Bruce Foods Company is in New Iberia, Louisiana. They make Cajun and Tex-Mex foods at four locations in the United States. Their plant in Wilson, North Carolina, specializes in canned yams. 

The Challenge

They sterilize the yams to 240°F (166°C) and then cool them to 105°F (41°C) using water during the canning process. The water flows through the system at 800 to 1,000 gallons per minute. As part of their water conservation program, they recycle cooling water. However, since there was no filtration, the water picks up dirt, dust, and other impurities that can stain the exterior of the container.
